For easy weeknight dinners, a courgette, pea and mint pasta is a brilliant go-to. It’s quick to prepare, full of flavour and makes the most of seasonal produce. Grate in some lemon zest at the end for additional zing, and parmesan and some pea shoots on top with make it look stunning!
Another simple favourite is a chicken and asparagus traybake with lemon and garlic - minimal prep, one dish, and maximum flavour. Chicken thighs are the best for this – skin on and, remember that asparagus takes very little time to cook, so throw it in at the end for the last 10 minutes.
For something meat-free, try grilling halloumi with roasted vegetables and couscous for a colourful, satisfying option that works just as well for lunch as it does for dinner.
