Warming Butternut Squash Soup Recipe
There’s nothing quite like coming home from a chilly walk, putting something cosy on and settling down with a bowl of hot soup. Butternut squash soup is a classic autumn and winter dish that warms you from the inside out.
Not only is it comforting and full of flavour, it’s also quick and easy to prepare, making it perfect for a simple lunch or light evening meal.
Ingredients
25g butter (or a low-fat spray alternative)
1 onion, chopped
1 carrot, chopped
2 potatoes (white or sweet), cubed
1 butternut squash, peeled, seeded and cubed
500ml chicken stock
1 teaspoon finely chopped garlic
Pinch of coriander
Salt and pepper to taste

Optional: A soup maker can make the process even easier — simply add the ingredients and return later to freshly made soup.
Method
Melt the butter in a deep pan over medium heat (or use a low-fat spray).
Add the coriander, garlic, onion, carrot, potatoes and squash. Cook for around 5 minutes, stirring regularly until the vegetables soften slightly.
Pour in enough chicken stock to cover the vegetables.
Bring the mixture to the boil, then reduce the heat and simmer for around 40 minutes, until the vegetables are tender.
Transfer the mixture to a blender or use a hand blender to blend the soup until smooth.
Add the remaining stock gradually until you reach your preferred consistency.
Season with salt and pepper to taste.

Add a pinch of chilli powder for a gentle warming kick.
Stir in a little crème fraîche for a creamier texture.
Roast the butternut squash pieces before cooking to add a deeper, richer flavour.
