Passionfruit and Key Lime Pie Recipe

Ingredients
Base
225g digestive biscuits
110g butter
Non-stick baking paper
Filling
Pulp of 2 passionfruit
Zest of 3 limes
1 tin (around 397g) condensed milk
3 large egg yolks
Method
Preheat the oven to 180°C and line the base of your tart tin with non-stick baking paper to prevent sticking.
Place the digestive biscuits into a sealed sandwich bag and crush them using a rolling pin until they resemble fine breadcrumbs.
Melt the butter in a pan. Pour the melted butter into a mixing bowl and combine with the crushed biscuits.
Press the biscuit mixture firmly into the tart tin to create an even base. Bake in the oven for 10 minutes, then remove and allow it to cool.
In a bowl, whisk together the egg yolks and lime zest until the mixture becomes pale and thick.
Add the condensed milk, lime juice and passionfruit pulp, whisking until smooth.
Once the biscuit base has cooled slightly, pour the filling mixture over the base and return to the oven for 15–20 minutes, or until the filling has set.
Allow the pie to cool, then place it in the fridge until ready to serve.
Serving Tip
For an extra finishing touch, grate a little fresh lime zest over the top of the pie before serving. The bright citrus flavour adds both colour and a refreshing burst of taste.
