Lime and Coconut Loaf Cake Recipe
With a new series of The Great British Bake Off underway, it’s the perfect time to slow down and enjoy a little baking at home.
A simple loaf cake is often a good place to start, something easy to make, but still full of flavour. This lime and coconut loaf brings a balance of freshness and sweetness, making it a light option to enjoy alongside an evening in.
Lime and Coconut Loaf Cake
Ingredients
4 eggs
230g caster sugar
225g unsalted butter
2 limes (zest)
2 tsp vanilla extract
30g desiccated coconut
2 tbsp whole milk or soya milk
225g self-raising flour

Method
Preheat the oven to 170°C (gas mark 3).
Prepare the loaf tin by lightly buttering and lining it with parchment paper.
In a bowl, whisk together the butter and sugar until the mixture feels light and creamy. Gradually add the eggs, followed by the zest of one and a half limes and the vanilla extract.
Sieve in the flour, then add the desiccated coconut and milk. Gently combine until the mixture thickens to a smooth batter. Pour into the prepared tin and level the surface.
Bake for around one hour. To check, insert a skewer into the centre, it should come out clean when ready.
Allow the cake to cool before removing from the tin. Finish with the remaining lime zest and a light sprinkle of coconut.
A simple recipe, but one that works well for a relaxed evening, something to enjoy as the series unfolds.
