How to Get The Best Use Out of BBQ Leftovers

It’s easily done, you host a BBQ, buy a little too much and suddenly you’re left with a fridge full of leftovers. The good news is that those extras can be turned into quick, tasty meals with very little effort.

Here are two simple recipes to help you make the most of your BBQ leftovers and avoid any food going to waste.

One-Pot Leftover Sausage Pasta

A hearty, flavour-packed dish that’s perfect for using up leftover sausages and feeding the whole family.

Ingredients

  • 1 tsp dried basil

  • 2 cups spinach, chopped

  • ½ white onion, diced

  • 1 tbsp extra virgin olive oil

  • 1 carrot, chopped

  • 2 cloves garlic, diced

  • 2 tomatoes, diced

  • 2 tbsp tomato paste

  • 3–4 leftover sausages, sliced

  • 3 cups chicken stock

  • 300g pasta (shells or similar)

  • 1 cup grated cheese

Method

  1. Heat the olive oil in a large pan over medium heat. Add the carrot, onion and garlic, cooking for around 5 minutes until softened.

  2. Stir in the tomato paste, then add the tomatoes, basil, sausages and spinach.

  3. Add the chicken stock and dried pasta, stirring well to combine.

  4. Cover and simmer for around 6 minutes, checking occasionally to prevent sticking.

  5. Remove the lid and serve with grated cheese on top.

Sweetcorn Grilled Fritters

A great way to use up leftover BBQ sides like corn, quick, simple and full of flavour.

Ingredients

  • 43g sweetcorn

  • 85g plain flour

  • ½ tsp baking powder

  • ½ tsp black pepper

  • Handful of chopped parsley

  • Vegetable oil

  • 78ml milk

  • 43g cornflour

Method

  1. In a large bowl, whisk together the flour, cornflour, baking powder, pepper and parsley.

  2. Add the milk and mix until you have a thick batter.

  3. Stir in the sweetcorn until evenly combined.

  4. Heat a little oil in a frying pan over medium heat.

  5. Spoon the mixture into the pan, flatten slightly and cook for around 5 minutes on each side until golden brown.

  6. Serve immediately.

Fritters are best enjoyed fresh but can be stored in the fridge for up to one day.

With a little creativity, BBQ leftovers can easily become the base for your next delicious meal.
