Easter Brownie Recipe

Ingredients
115g butter, melted
225g caster sugar
1 tbsp olive oil
2 eggs
Pinch of salt
65g plain flour
60g cocoa powder
Toppings:
Easter eggs of your choice (Olly recommends crème eggs, mini crème eggs and mini chocolate eggs)
Method
Step 1
Preheat the oven to 180°C (fan).
Step 2
Grease a square baking tin with butter and line the base and sides with baking paper or parchment paper.
Step 3
In a medium bowl, mix together the sugar, melted butter and olive oil. Whisk for around 45 seconds.
Add the eggs one at a time, mixing well after each addition. Continue beating until the mixture becomes slightly lighter.
Step 4
In a separate bowl, sift together the flour and cocoa powder, then stir in the salt.
Fold the dry ingredients into the wet mixture until no pockets of flour remain. Be careful not to overmix, as this can affect the texture of the brownies.
Step 5
Pour the batter into the prepared tin and bake for 22–26 minutes, or until the surface is firm to the touch. Remove from the oven and allow to cool for 15 minutes.
Step 6
While the brownies are cooling, chop five crème eggs in half and roughly chop some mini chocolate eggs.
After the brownies have cooled slightly, press the halved crème eggs into the surface in your preferred pattern. Place the tin in the fridge and allow the brownies to cool completely.
Once fully cooled, sprinkle over the chopped chocolate eggs. Slice into squares and enjoy your rich, fudgy Easter brownies.
